01. Palamut (Atlantic Bonito) - The delicious metal fish you see on the plate was pulled from the bay of Sinop by our divers and represents the toxic metals mercury, arsenic and lead which accumulates in our seafood. Irresponsible agricultural, industrial and waste management practices lead to toxic metal pollution in our seas, oceans and rivers. Once in the marine environment, these metals are absorbed by fish and other sea life. Species higher on the food chain such as Palamut (Atlantic Bonito) feed on smaller fish, resulting in a higher concentration of toxic metals in their body which then can be passed on to human beings.

02. Kebap (Kebab) - The fresh Kebab we have prepared represents the vegetables and meat that, despite being grown on land, impact the sea in harmful ways due to unsustainable industrial agricultural practices. Pollutants such as pesticides, fertilizers and animal waste find their way into the sea as runoff when they are washed into rivers and streams, eventually finding their way to the oceans. Many major rivers impacted by this pollution empty into the Black Sea, such as the Danube, Dniester, Dnieper and Kızılırmak. This runoff degrades water quality, poisons marine life and drastically alters the aquatic ecosystem through algal blooms, which choke out other marine species.

03. Salçalı Makarna (Pasta) - The appetizing pasta dish before you is made out of styrofoam collected from the beaches of Sinop province. Styrofoam debris is highly resistant to degradation and easily floats on the water. That means the effect of discarded styrofoam reaches far and wide, this problem can wash up on beaches many years later and thousands of kilometers away.
Just as the “pasta” presented to you as a meal today, animals such as turtles, seabirds and fish often mistake styrofoam debris as food, leading to injury, sickness, blockages and even death for these unsuspecting creatures.

04. Çoban salatası (Shepherd’s Salad) - The refreshing pasta we have prepared is made of rope, twine and nets. This represents the pollution caused by synthetic materials left over by maritime and fishing industries which poses a serious danger to marine life. Ropes and nets made from natural sources such as reeds, hemp and even silk have been used for centuries. Only recently have synthetic fibers taken over as the preferred material for this equipment, synthetic material which cannot biodegrade naturally and possesses a great risk of entanglement, strangulation and habitat destruction for sea creatures. From delicate corals to mighty whales and clever dolphins, abandoned nets can mean sure death. Even the infrastructure such as docks, piers and boats that coastal communities rely on can be damaged by this kind of debris.

05. Çikolatalı Pasta (Chocolate Cake) - The delectable Çikolatalı Pasta (Chocolate Cake) you see before you is the centerpiece of our meal. It is represented by a barnacle encrusted shoe hand selected by our divers. This represents the extent to which the marine environment has changed as a result of manmade pollution. For marine life, the presence of debris discarded by humans is constant. Even the most remote regions of the world’s oceans are host to all manner of garbage and waste. When this pollution breaks down it does not disappear but rather becomes microplastics. Due to their tiny size these particles are extremely difficult to filter out of the water and make their way into animals, working their way up the food chain to even impact human beings.
